Pineapple Fried Rice

Pineapple Fried Rice (Makes 4 servings)

My husband and I enjoy a local Asian eatery that serves this dish. We thought it would be fun and oh so simple to make at home. Plus it makes a great vegetarian dinner option! I served this to a group of friends and even the little ones loved it! 

What you will need 
Half a pineapple
Two stalks of green onion
1/4 to 1/2 yellow onion
3/4 cup raw cashews
1/2 cup golden raisins
2 eggs 
1 bell pepper (I prefer a red bell pepper
1/2 cup olive oil or grapeseed oil
Soy sauce to taste
2 tbsp sesame oil


  1. Make whatever kind of rice you like (I use long grain brown rice but you can use instant or white if you prefer)
  2. While rice is cooking heat 2 tbsp oil over medium low heat in a large deep skillet.
  3. Add eggs and scramble. Remove eggs and set aside
  4. Add a little more oil and onion and bell pepper chopped.
  5. While these are cooking pre heat oven to 250 degrees (roast cashews on a baking sheet for 30 min.)
  6. After onions and peppers have become a bit browned add in chopped pineapple and cook for a few minutes
  7. Add in cooked rice, golden raisins, and soy sauce to your liking
  8. Stir and continue cooking on medium heat for ten minutes
  9. Add the rest of oil if needed and egg, stir well
  10. Top with toasted cashews and green onion
  11. Serve and enjoy immediately!
