Veggie Pizza (Makes 4 Servings)

Once a week I make these delicious personal sizes pizzas. They are so easy and give you and your family around three servings of veggies per pizza. Can't get the kids to eat there veggies? This should help! Theses pizzas could even be made as a family. Add any toppings you like. Plus you can make these vegetarian or even vegan!


What you will need

4 whole wheat pitas (these will be personal size pizzas)
1 14 oz. can of crushed tomatoes or tomatoe sauce no salt added
2 cups of shredded mozzarella or vegan mozzarella (daiya brand for vegan cheese is best)
1 cup of chopped broccoli chopped
1 green bell pepper chopped
1 red bell pepper chopped
1/2 yellow onion chopped
1 cup sliced baby portabella mushrooms 
2 tbsp basil pesto or sundried tomato pesto (optional)

To taste

Crushed red pepper flakes
Garlic salt
Italian seasoning
Sea salt
Onion powder 

Tip- I use around a tsp of each seasoning except crushed red pepper if you want it less spicy use less. 

Instructions

  1. Mix all spices together in a small bowl
  2. Pre heat oven to 350 degrees
  3. Top each pita with sauce
  4. Dollop basil pesto or sundried tomato pesto (optional)
  5. Sprinkle seasoning on each pita
  6. Chop all vegetables finely
  7. Top each pizza with veggie mixture
  8. Top each pizza with a half cup mozzarella, vegan mozzarella, or no cheese at all 
  9. Bake for 14 minutes
  10. Serve and enjoy!
