In the Kitchen: Grilling Extravaganza Continues!

When enjoying grilled tilapia and street corn from my last post you may want to add in or sub grilled vegetable mix and seasoned potatoes on the grill. These simple recipes give you so many options for sides to accompany grilled tilapia. So get grillin!!! 



Ingredients Grilled Vegetable Mix

2 bell peppers (red and green)
1 zucchini
1 yellow squash
1 onion
1 crown of broccoli (optional)
1 tbsp olive oil
Sea salt to taste
Pepper to taste
2 garlic cloves minced
1 tsp of smoked sweet paprika
 


Instructions

  1. Rough cut peppers, zucchini, yellow squash, onion, and broccoli
  2. Place in a large foil pouch on a cookie sheet
  3. Coat veggies with olive oil, sea salt, pepper, minced garlic, and paprika
  4. Toss together with your hands. It's messy but hey olive oil and sea salt are great for you hands! 
  5. Place on the grill with the pouch almost closed, leaving open just to vent
  6. Keep on the grill until veggies are to desired tenderness. Test with a fork.(about 40 minutes is good)

Ingredients Seasoned Potatoes on the grill


1 to 2 lbs. Yukon Gold potatoes

Sea salt to taste

1 tsp. red pepper flakes (less or more based on how spicy you like it)

2 tbsp olive oil
2 sprigs of fresh rosemary
1 tsp fresh lemon zest
1 tsp. garlic powder (optional)



Instructions

  1. Rinse and chop potatoes into 1 inch cubes
    coat with olive oil, red pepper flakes, sea salt, lemon zest, and garlic powder
  2. Place potatoes in large foil pouch double reinforced and place rosemary sprigs on top
  3. Close pouch, venting just a bit
  4. Cook on grill for 45 minutes to 1 hour
