In the Kitchen: Apple Bran Muffins

Well Autumn has finally hit the UK! London was very cold and rainy today, a warm coat and boots were essential. I even turned my hit on this evening. Now with autumn upon us I thought it appropriate to share my favourite apple muffin recipe with you. They are absolutely scrumptious and not too unhealthy for you. When Raeganne came to visit me in London this past summer, we made these delicious muffins because they are just too good not too. In our last flat we had an apple tree and each spring the apple tree would flourish with so many apples, we had no idea what to do with them. We made loads of apple puree and with the apple puree we made muffins!!!

What you need:


Preheat oven to 350 degrees F.
In a large bowl, whisk together bran, flour, baking soda, baking powder, cinnamon, and nutmeg.
In a separate bowl, whisk together egg and yogurt until smooth. Stir in applesauce/puree and honey. Combine mixtures.4.
Spoon batter into paper-lined muffin cups. Bake for 22 to 25 minutes or until tops spring back when lightly touched. Cool on a wire rack.
