In the Kitchen: Protein Bars

If you are like me, you are in a hurry in the morning. I drink a smoothie almost every morning before work, but sometimes I need a little something to go with it. Theses healthy and yummy Protein Bars are the perfect compliment. They make great snacks for in between meals. Plus you can get creative with them and change it up with what you add in. 

What You Need

1 cup Oatmeal

1/2 cup Peanut Butter
1/3 cup Honey
1 cup Coconut Flakes 
1/2 cup Ground Flaxseed
1/2 cup dark chocolate chips ( I used a mix from the store containing dark chocolate, dried cranberries, almonds, and walnuts.)
1 tsp vanilla 


  1. If you use a trail mix mixture as I did you will want to chop this finely in a food processor or run a very sharp knife over it until fine. 
  2. Combine all ingredients in a medium bowl and mix well. 
  3. Line a 9x9 glass baking dish with parchment. Let the parchment hang over the sides. Press the mixture down into the pan until packed firm. Place in the fridge to firm up for 45 minutes or until really firm. 
  4. Lift the  parchment out of the pan onto a cutting board. Leave mixture on parchment and cut into squares. I was able to get 16 bars. 
  5. Store in an airtight container for up to a week.

Feel free to substitute any of the mix ins such as different nuts or different dried fruit. These bars are packed with Omega 3, fiber,and protein to keep you going!
